This extra-virgin olive oil is made of 50% ‘Nocellara Etnea’, 25% ‘Biancolilla’ en 25% ‘Tonda Iblea’ olives grown in groves located in the Lentini agriculture zone (Syracuse province). They get harvested (hand-picked, of course) early mid to end October exactly at the time when the olives change their colour from green to black and develop their splendid taste. Between harvesting and the continuous cold pressing pass less than 8 hours, to keep all fragrances preserved which make this oil so rich.
